Seitan of Hell: Feast of the Damned

A dish as hot as the flames of Hell, where seitan is the king of culinary demons.
Cursed Ingredients (for 4 Lost Souls):
- 400 g of demon flesh (seitan in fact...) in slices or pieces
- 2 tablespoons olive oil
- 1 red onion, finely chopped
- 3 cloves garlic (essential for repelling the forces of good), chopped
- 2 fresh red peppers, thinly sliced
- 1 teaspoon chili powder (hell's ashes, or smoked paprika for abysmal intensity)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 400 g crushed tomatoes (blood of the damned, canned)
- 1 red pepper, cut into strips
- 100 g corn – optional
- 1 tablespoon soy sauce
- 1 teaspoon agave syrup or sugar
- Salt and pepper
- Fresh coriander
- Limes, quartered to serve
Instructions for the culinary ritual:

Summon the seitan:
- Drain and dry the seitan as you would purify a damned soul. Cut it into pieces to better release its power.
- In a large frying pan, heat a spoonful of oil and brown the seitan until it is as crisp as a petrified soul. Set aside in a dark corner.

- In the same pan, add the rest of the oil and brown the onion and garlic. These two accomplices release their infernal aromas in a few minutes.
- Add the sliced chili peppers, chili powder (or smoked paprika), cumin and oregano. Mix like an alchemist seeking perfection.

Add the blood of the damned:
- Add the crushed tomatoes, red pepper, corn, soy sauce, and agave syrup. Stir while whispering your secret incantations.
- Let this demonic mixture simmer over low heat for 10-15 minutes, until it thickens.

Gather the darkness:
- Return the seitan to the pan and cook for another 5 minutes until it becomes a perfect whole.

Offer your creation:
- Serve this dish piping hot, topped with fresh cilantro and surrounded by lime wedges (perfect for calming the infernal heat). Accompany with black rice or dark tortillas for a presentation worthy of the abyss.
